Homemade Muesli Recipe

 

Is muesli a healthy breakfast option?

Standing in the supermarket reading labels can be a painful task…and how bad can breakfast cereal really be?!

Despite portraying a healthy image, store bought muesli can often be high in sugar and may contain unnecessary calories, carbs and fat.

The only way to ensure your breakfast is as healthy as it can be, is to make it yourself! The benefits of homemade muesli are plentiful;

  • less sugar and calories than most store bought breakfast cereals
  • high in fibre to assist in digestion and regulate weight control
  • nuts to provide a source of protein and omega-3

Try our toasted muesli recipe below! Not only is it packed with fibre and protein, it is a delicious start to the day,

Ingredients

  • 3 cups rolled oats
  • 1 cup shredded coconut
  • 1/2 cup chopped raw almonds
  • 1/2 cup chopped macadamia nuts
  • 1/2 cup chopped hazelnuts
  • 1/3 cup pepitas
  • 1/4 cup psyllium husk
  • 1/4 cup chia seeds
  • 1/4 cup flaxseed
  • 1 tsp cinnamon

Combine all dry ingredients in a bowl and then add:

  • 1/2 cup melted coconut oil
  • 1/3 cup of rice malt syrup
  • 2 tsp natural vanilla

Mix together all ingredients and place mixture onto a baking tray lined with baking paper. Bake on 180 degrees for 20-25 mins or until golden brown. Stir occasionally. Allow to cool before adding:

  • 1/2 cup of goji berries

Store in an air tight container. Enjoy with your favourite dairy product and some optional fresh fruit.
